A few weeks ago, Mike – owner of Tony Boloney’s, a place that is so much more than a pizza spot – reached out to do a collaboration. As soon as Mike reached out, I thought about my dad aka Aba (dad in Hebrew) and his special Moroccan-Israeli spice. My father created this spice recipe before I was even born. He was inspired by a steakhouse he used to frequent in his rock band days in Israel. Since then, the spice has been a staple. He makes it for all family members. We put it on everything – chicken, salads, hummus, steak, everything you can think of. It adds so much flavor to anything you make. When I mentioned this to Mike, he said, “That sounds perfect. Let’s make a Israeli-Moroccan inspired pizza for Tony Boloney’s. Bring it in.”
I brought in the spice and Mike created the most incredible pizza pie that would make my father extremely proud. He used the spices in the crust, which added a nice crunch and smokiness to an already-delicious crust. The pizza has beet hummus, roasted cauliflower, quinoa, Israeli feta cheese, tahini sauce, labne, my dad’s spice and I am definitely missing something but you get the idea. It’s fantastic!
