Well… Here’s my backstory! LOL.
It’s so crazy that on the 6th year of writing this blog, I decide to bring things back to my OG plan for this website. It was going to be lifestyle and some JC stuff. Then became mostly JC things and now we are doing a little bit of everything.
So you may not know but I am pretty darn good around the kitchen, I grew up in a family environment where my mother and father cooked a lot. At a young age my mother instilled in me the importance of making food for your loved ones, even though she worked crazy hours no matter how busy she was there was always food on the table. Delicious food.
My mother is the best cook I know don’t @ me. I learned everything from her. All that being said, when I was around 17 years old, I discovered the gym and eating healthy so needed to figure out a balance between mommy’s home cooked deliciousness (she also really loved baking cakes) to incorporating healthy foods.
Fast forward to later in life when I started a family, I found a way to combine the comfort of home cooked foods and healthy eating. When I was married, I used to cook almost every day, and not to get all personal on a recipe post but when I got divorced I just stopped cooking. I made things for myself here and there and my kid eats the same shit everyday so not much creativity there. Then recently I started making food for myself and it’s fun. So welcome to ReciPEAS (thank you to my readers for this suggestion)

In comes my EPIC salad.
I started making this when I was 17, at the time there wasnt any of those fancy $20 salad places. Basically I use everything and anything we had in the fridge and pantry, put it in an extra large bowl, added dressing and voila. Then I decided to increase the quantities and put half of it in a Tupperware to bring to work. It was genius.
All these years I became known for making the best salads, because they taste good, are filling and are filled with so much goodness that you’ll want to eat it every day. They are so big that there’s no way you won’t be full and satisfied.
What You Need:
- Washed Greens (stick to dark greens, kale, baby kale, spinach)
- Small mini cucumbers (wash, don’t peel)
- Canned Beans
- Avocado
- Cauliflower
- Any other canned goods: Hearts of palm, artichokes, corn etc
- Hemp Seeds or any seeds
- Tahini
- Lemon
- Olive oil
- Any other vegetable you like put it in there
