I have been a huge fan of Bambino chef since they first opened in Jersey City. Bambino chef teaches kids between the ages of 4-12 how to cook, healthy eating, creativity , focus, concentration and an appreciation for food…. most importantly they have a blast doing it!
When you walk into Bambino chef you immediatly smile, it is such a happy and colorful place. I love it! I am very jealous of Bambino Chef’s kitchen, it is beyond adorable! What a fun place for kids and their caretakers. I cannot wait till Mia is old enough to come here, perhaps she can take on the cooking in my household?!
I recently went to visit Rene a beyond fabulous mother of 3 and owner of Bambino chef to help me out with my picky toddler. In the past few months my adorable munchkin refuses to eat anything other than Mac and Cheese, Cereal , Yogurt and Sweet Potatoes…. Sound familiar? So I asked Rene for a quick and fun recipe for kids and adults alike! this is vegetarian and a healthy recipe to boot!
Ahh, what is the magic trick in getting your child to eat better? Think like a kid and it will do the trick: simple, easy, fun. After a few fiasco dinners when I created a delicious meal that kept my husband and guests asking for more, I noticed that my children were reaching out for something not so complicated, sophisticated and certainly a less than 15 minute ingredient dish! My goal: create kid friendly, easy and nutritious dishes that appeal to me and our bambini’e which can also be cooked by parents and budding chefs. With that said, I present you:
Couscous Cranberry Cupcake
Ingredients
- 1 Cup of Cooked Couscous
- 1 Cup of Shredded Parmesan
- 1/3 Cup of dried cranberries (you can add more if you like)
- 2 Tbsp’s of lemon juice
- 1 Tbsp of Olive oil
- 2 Tbsp’s of finely chopped chives
Optional
- 1 Egg
- 2 Tbsp of bread crumbs
Step 1: Preheat oven to 400F. Mix all ingredients in a large bowl, leaving a bit of parmesan cheese on the side.
Step 2: Allow your budding chef to fill up baking cups with the mixture. This task is even more fun when using a colorful Ice cream scoop!
Step 3: Sprinkle all cups with the remaining cheese and top off with bread crumbs. Bake for 10-15 minutes and voila! These cupcakes are best served warm so no need to wait much longer!
